Prosciutto-Wrapped Asparagus Bundles
Ingredients:
● 24 asparagus stalks, washed and dried
● 8 slices prosciutto (about 3 stalks per slice)
● 2 tbsp olive oil
● ½ cup grated Parmesan cheese
● Freshly ground black pepper, to taste
● Optional: thick balsamic glaze for drizzling
Instructions:
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
2. Trim the woody ends off the asparagus by snapping them where they naturally break.
3. Take 3 asparagus stalks and wrap them tightly with one slice of prosciutto. Repeat until all asparagus is bundled.
4. Place the bundles on the baking sheet and drizzle lightly with olive oil.
5. Bake for 8 minutes, then carefully turn the bundles over and bake another 8 minutes.
6. Flip the bundles back to the original side, sprinkle evenly with Parmesan cheese, and bake an additional 5 minutes until the cheese melts and turns golden.
7. Remove from oven and season with freshly ground black pepper. The prosciutto and Parmesan provide plenty of saltiness, so extra salt is usually unnecessary.
