Creamy Beer Cheese Dip

Ingredients:

● 2 tablespoons unsalted butter
● 2 tablespoons all-purpose flour
● ¾ cup beer (amber ale or lager works best)
● ½ cup whole milk
● 1 teaspoon Dijon mustard
● 1 teaspoon Worcestershire sauce
● ½ teaspoon garlic powder
● ¼ teaspoon smoked paprika
● ¼ teaspoon cayenne pepper (optional, for heat)
● Salt and pepper, to taste
● 2 cups shredded sharp cheddar cheese
● ½ cup shredded mozzarella (for meltiness)
● Optional garnish: chopped chives, crispy bacon, or jalapeños

Instructions:
1. In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for about 1 minute, stirring constantly, to form a light roux.
2. Slowly whisk in the beer until smooth, then add milk. Bring to a gentle simmer, stirring often, until thickened—about 2–3 minutes.
3. Stir in Dijon mustard, Worcestershire sauce, garlic powder, smoked paprika, and cayenne. Add salt and pepper to taste.
4. Reduce heat to low. Add the cheddar and mozzarella gradually, stirring until fully melted and smooth. Don’t boil!
5. Transfer to a serving bowl or fondue pot. Top with your favorite garnish if desired.
