Street-Style Elote Corn

Ingredients:
● 4 ears fresh corn, husked
● ¼ cup mayonnaise
● ¼ cup Mexican crema or sour cream
● ½ cup cotija cheese (crumbled) or feta as a substitute
● 1 tsp chili powder (adjust to taste)
● 1 tbsp fresh lime juice
● 2 tbsp chopped fresh cilantro
● Salt, to taste
● Lime wedges, for serving

Instructions:
1. Preheat a grill or grill pan to medium-high heat. Grill the corn, turning occasionally, until charred and tender, about 8-10 minutes.
2. In a small bowl, combine mayonnaise, crema (or sour cream), lime juice, and a pinch of salt.
3. Using a brush or spoon, slather the grilled corn with the creamy sauce mixture evenly on all sides.
4. Sprinkle generously with crumbled cotija cheese and dust with chili powder.
5. Sprinkle chopped cilantro over the corn. Serve with lime wedges for squeezing on top
