Basic Idaho® Potato Tots
Ingredients
10 Idaho® potatoes, peeled (80 ct bakers)
1 lb. aged andouille, minced
1 lb. smoked cheddar, small dice
1/4 c. Parmesan, finely grated
1/4 c. fresh rosemary, minced
1/4 c. fresh sage minced
1 tsp. chile pepper flakes
Directions
1. Boil potatoes, starting in cold water, and boil for about 15-25 min. (depending on how many potatoes) until they can be pierced with a fork but not falling apart. Cool to room temperature and grate.
2. Form into small croquette. Fry; season with kosher salt and pepper.
Mix together sausage and cheese and form tot around filling, about 1 Tbsp. each.
Mix spice ingredients well, season tots with mixture after frying.
Make basic tot recipe, spray with white truffle oil and season with salt and pepper.
